Cranberry sauce tends to be one of those things that most people either love or hate. When I was a kid, I can truly tell you that I hated it. With age I have learned to really love it.
Cranberries tend to be very sour, but in this recipe, citrus and sweetness are added to decrease the sourness. It makes for a very tasty combination. Cranberries are one of the most healthy things that you can eat. They are great with just about any type of meat. While they are known for being eaten with Thanksgiving dinner, you certainly don’t have to have them just once a year. This is something that you can eat all year-long.
Try stepping out of your box of tradition and try making this at some time other than Thanksgiving. I think you will be glad you did. Enjoy!
What you will need:
1 cup fresh orange juice
1 tsp minced fresh ginger
1 tsp minced orange zest
1/4 tsp cinnamon
12 oz bag of fresh or frozen cranberries
1/2 cup crushed pineapple
1/2 cup honey
How to make it:
Bring orange juice, ginger, zest and cinnamon to a boil on high heat in a medium saucepan.
Rinse cranberries and add once liquid is boiling. Reduce heat to medium and cook uncovered for about 10 minutes.
Add crushed pineapple and honey. Remove from heat and cool.
