Steamed Orange Chicken

If you are trying to lose weight, eating chicken breast is a good thing to eat.  Just because it is healthy, does not mean that it has to have no flavor.  There are endless possibilities when it comes to marinades and sauce combinations you could use.

This particular recipe really packs a big flavor punch.  You get the brightness of the fruit juices, the smoothness of the honey, and the distinct flavor of the mint.  I think it is a good idea to always marinate something overnight, like you do in this recipe.  This gives ample time for the meat to absorb the flavors of the marinade and makes the end product taste much better.

This looks so good.  It would go perfect with some brown rice or try roasting some squash and potatoes for a perfect fall side.  This one is sure to please and you won’t even know you are eating healthy.  Enjoy!

RECIPE OVERVIEW:

Prep Time – 10 Min
Cook Time – 30 Min
Total Time – 8 Hrs 40 Min

INGREDIENTS:

4 skinless, boneless chicken breast halves
1/4 cup lemon juice
1/4 cup lime juice
3 cups orange juice
1/4 cup crushed fresh mint leaves
2 tablespoons honey

COOKING DIRECTIONS:

Step 1
Place the chicken into a large bowl, and pour in the lemon juice, lime juice and orange juice. Sprinkle the mint leaves over, and drizzle with honey. Cover and refrigerate overnight.

Step 2
Preheat a grill for medium heat. When the grill is hot, lightly brush the grate with oil.

Step 3
Place the chicken onto the preheated grill, and discard the marinade. Cook for 6 to 8 minutes per side, or until no longer pink and juices run clear.
