Shrimp Soup

Here is a healthy and very simple recipe to make.  As the cooler days of fall approach, sometimes it is nice to have a warm bowl of soup.  Here is a healthier option that contains shrimp. 

I personally like a lot of vegetables in my soup so I would take this recipe as a base, but then add things like carrots, celery, and onions.  Maybe even some brocoli.  You could add some soy sauce, sesame oil, and some Bok choy and make an Asian-inspired shrimp soup.  The possibilities are endless.  The important thing to remember is that the dish will stay healthy if you only add healthy things to it.

I will definitely be making this one since I have some frozen shrimp I need to use up.  Give this recipe a try and let me know what you think.  Enjoy!

RECIPE OVERVIEW:

Cook Time – 25 Min
Prep Time – 15 Min
Total Time – 25 Min

INGREDIENTS:

2 (14.5 ounce) cans chicken broth
2 (14.5 ounce) cans beef broth
2 (10.5 ounce) cans shrimp consomme
2 1/2 cups frozen shrimp, thawed
1 teaspoon fresh dill weed
salt and pepper to taste
2 tablespoons sliced green onions

COOKING DIRECTIONS:

Step 1
In a large saucepan over medium heat, combine chicken broth, beef broth and shrimp consomme. Bring to a simmer, then strain.

Step 2
Return broth to pot and add shrimp and dill. Heat through and adjust seasonings. Garnish with chopped green onion.
