If you are anything like me, you really love potatoes. I love them baked, fried, mashed, double-baked, even roasted. The problem is that potatoes are loaded with starch and too much of them is not good.
Here is a healthy alternative. This potato bake has zucchini added to it. Zucchini is much healthier and has almost no starch. Since there is still potatoes, you get that great potato taste and since the zucchini cooks down and has very little taste, it can take on the taste of the potatoes. This is a great trick to use for eating healthier.

Zucchini and Potato Bake
Prep Time – 15 min
Cook Time – 1 hr
Total Time – 1 hr 15 min
2 medium zucchini, quartered and cut into large pieces
4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced
1/2 cup dry bread crumbs
1/4 cup olive oil
paprika to taste
salt to taste
ground black pepper to taste
Preheat oven to 400 degrees F (200 degrees C).
In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.
