As summer approaches, I like to look for recipes that are a little lighter and have a citrus component to them. I came upon this recipe that seems to fit the bill very nicely. This would be something that would be very easy to make and is very light and healthy. I will definitely be grilling this sometime soon. Enjoy!
Prep Time – 10 Min
Cook Time – 30 Min
Total Time – 8 Hrs 40 Min
4 skinless, boneless chicken breast halves
1/4 cup lemon juice
1/4 cup lime juice
3 cups orange juice
1/4 cup crushed fresh mint leaves
2 tablespoons honey
Place the chicken into a large bowl, and pour in the lemon juice, lime juice and orange juice. Sprinkle the mint leaves over, and drizzle with honey. Cover and refrigerate overnight.
Preheat a grill for medium heat. When the grill is hot, lightly brush the grate with oil.
Place the chicken onto the preheated grill, and discard the marinade. Cook for 6 to 8 minutes per side, or until no longer pink and juices run clear.
