I’m sure that most of you enjoyed watching the Super Bowl last night with friends and family. It was a great game and there were some pretty good commercials to go along with it. For many of us, one of the fun things about the Super Bowl is the great food that you get to eat. More often than not, it is not always the most healthy food in the world. I know that I could have done much better myself.
To those of us trying to lose weight in 2012, don’t lose heart. It is not too late. So what if you got off your diet for one day. That is OK. Today is a new day and you can get back on track starting today.
With that in mind, I would like to share with you another recipe that is very healthy for you and still can be filled with plenty of flavor. Obviously, turkey is one of the best meats you can consume to reduce your calories consumed, and salad is always good for you. So whip yourself up this turkey salad and smile knowing you are right back on track. Enjoy!
Turkey Chef’s Salad
What you will need:
1 1/2 lb mixed salad greens
1 cup fresh basil leaves torn into pieces
3/4 lb sliced turkey breast
1 small jar of prepared roasted peppers (about 7 oz)
4 oz Kalamata olives
1 1/2 basket cherry tomatoes, cut in half
3 TBS chopped fresh parsley (or 3 tsp dried parsley)
1 medium avocado, cut into cubes
*optional 4 oz goat cheese
Dressing: 2 TBS balsamic vinegar
2 TBS extra virgin olive oil
Salt and cracked black pepper to taste
How to make it:
Rinse and dry salad greens. Drying is best done in a salad spinner.
Divide the greens and rest of ingredients equally on 4 plates.
Top with goat cheese, if desired.
Whisk together vinegar, oil, salt, and pepper and drizzle on top of salad.
